Going...Vegan.

You read it right. I'm going vegan. For 30 days. And I'm going to blog my experience. So follow along!! It's gonna be fun. (I hope!)

Let's back up a bit and explain a few things...

Why would I try something like this?? Well, life as a Mommy is great--but sometimes you need to spice things up. Change it up a bit. Focus on something for me and enjoy the process. I've been thinking about this for a few months and now is the time to try it.

Plus, in this house we are stuck in a rut of eating the SAME thing over and over. We need change! We need new recipes. We need...a chef. But, since we can't afford to hire one...It's up to me to be that change.

So here's how it will work:

Starting next Sunday--I am going vegan. For 30 days. From time to time I'll blog about my success, failures, and cravings of all thing non-vegan and share with you--my readers--the experience.

Now, let's stop and tell you about my LOVE for food. I've never missed a meal. (Sad.) I love ALL sorts of food, but when I'm free to pick I almost ALWAYS choose the BAD things over the good. So, I thought that if I restricted myself in a MAJOR way...I'd make better choices. (Go big or go home type of living)

Now, I know some of you are thinking I'm one of those girls who won't struggle with this--hates fast food and all things unhealthy. Wrong.

I almost always get a sweet tea from McDonald's every weekday.
My husband and I eat steak about once a week.
I LOVE a GOOOOD burger and all the trimmings.
Dairy is a daily thing in my life.
And I DO love McDonalds. (Hangs head)

And for real.  I'm going vegan.

Do I have concerns? You bet I do!!! Here are some of them!
What will my family eat!? My husband (a hunter) already asked if that meant he would become a vegan. I told him no. It's just me. (and Lincoln who's 7 months old and just starting his eating life)

How will it all work out? Me cooking one meal for my family and me eating another?!

Can a mom of a 2 year old and 7 month old really not go insane by doing this??

I already dislike grocery shopping and will I dislike it even more??

What about protein? HAHAHA. Ok. I was joking. I totally am not even worried about that. Moving on.

So, I'm doing it. And, I specifically picked this month (May 13-June 11th) for a reason.

Graduation Open Houses: I want to see what it's like to have to limit yourself to vegan food and struggle to find GOOD foods to eat!

Memorial Day: Also...a good holiday for the GRILL to come out. And see what I'll be eating by then and see if I break down and cry over not eating a burger. (Summer of 2010 ALL over again---more of that later!)

Come...JOIN me and my adventure and see what happens when this SMALL TOWN girl---who now lives in the country---married to a hunter-meat lover--raising 2 little boys goes vegan.

I can see it becoming a reality TV show already!!

I'm part of a weekly meal share that's vegan. It's been yummy and a nice change. Send me your email on fb and I'll forward you the recipes. I can't wait to see some of your recipes because every four weeks I have to make something vegan for 3 other families besides my own. It was just my week and I made stuffed peppers. It was yummy.

Keep it up Rachel! Rachael Patel told me what you were up to on your challenge. I've been vegan since 1998 and sometimes I feel like I'm in the same rut you face as "an omnivore." haha. My husband laugh/grumbles when I call him that. haha. Being part Italian my father still thinks I'm in some kind of weird phase but tolerates my vegan-isms/ology. My pastor did a 30-day vegan stint and said he felt better but alas was not "converted." *sigh* I'll stay tuned to your adventure. Oh, and a quick baking tip, any time you see "egg" in a recipe you can substitute each egg with 2T cornstarch and enough water to equal the consistency of the egg. Never fails.

I don't even know what to say to tell you how excited I am for you! :) You're going to feel AMAZING. I promise. You're body will adapt and thrive off of a healthy vegan diet. I'm fiiinally getting back to blogging now that school is over so hopefully I will be posting some recipes that will help you out. Otherwise feel free to shoot me any questions or if you need some encouragement, I've got ya girl! ;)Also, adding to the previous comment, 1 tbsp ground flax seed and 3 tbsp warm water whisked together and set aside to become thick works perfect as an "egg" too.

Oh man! You can do it!!! It'll be interesting and a great experience. It might be hard at times (Open Houses?? REALLY?!) but if you stick with it you will NOT regret that you did.
:) I'm interested to see how it goes.
I've never had the desire to go vegan (way too restricting...and you DO need protien - yes, I'm a nurse and my husband's a personal trainer) but I've thought of vegetarian with the ability to eat eggs and maybe fish.
