Hello Friends!

Were you worried I died on my 1st day as a Vegan? ;) I'm alive and well. Here's the latest....

Since I last posted, I started eating more and more veggies. Then, by Wednesday, I stopped eating meat. And slowly, I started giving up dairy and eggs. SLOWLY I might add.

Before I started I'd have these moments of "I'm super excited to try it...Let's do this!" And then would come the "I don't know WHY I did this. What was I thinking?" But, people have helped me along the way and even non-vegan people have encouraged me to try it...

The other day I was talking with my husband and I was telling him about my reasons for doing this. And I wanted to share my reasons with you...since you all are so wonderful to follow this journey with me.

1. Do people REALLLLY feel better eating vegan foods?
2. My nose runs constantly...will it stop if I give up dairy?
3. Is vegan food really as good as they say?
4. Can I do it? And if I do it will I stay vegan?

Honestly, I'm on day 2 and can't answer any of those questions yet! ;) But, I know in the next few weeks I will be able to and will share as we go along!!!

Best thing: Um...I'd say it was the veggie pasta dish I whipped up the other day. I just grabbed every veggie I had---heated them up with oil and made some pasta and threw it together. Um. Yeah. That's like my go-to lunch item. Already I can tell...yum.

Worst thing: I tried 2 different waffle recipes. One was from the internet. And that one was not good. Not bad, but not good. But I don't think I'd make them again. The other recipe was from a friend of mine's friend. (Does that make sense?) Anyway, that one was great. My son begged for more "pancakes" this morning! I had made a batch of them and they are in the freezer waiting for me to eat them...if my son doesn't get to them 1st.

What I miss eating: I'd say right now---eggs for breakfast. Which is weird since I have hated eggs my whole life......but I've learned they help me not to have my blood sugar dip around 10:30am so, that's why I eat them.

How I am feeling: I am soooooo tired today. I think it might be because 1. I was up ALOT with 2 boys. (Happy Mother's Day to me) and the other part is just a new eating plan and I feeling sluggish.

This week should be interesting in cooking...I still plan on making our normal foods for the family and then making things for me on the side. Stay tuned...as I share with you the ups and downs of becoming vegan.

Rachel you are so brave in doing this! and i'm so excited to be along on this journey of you becoming a Vegan i think its really going to open my eyes on food and how it affects us, so good job on your first day!!:)
